Chave is stocked with the seriousness usually reserved for the Côte d'Or, and Hermitage from that address is the argument for being here rather than at the Bloomsbury original. Les Horées and L'Archiviste bring the newer Burgundian négociant wave; Rousset-Martin holds the Jura; Roulot anchors the whites. Fortified wine is a thread here rather than a courtesy, Madeira included. Finish with something old and brown — it is the part of this list people skip, and regret skipping.
