About this wine list
Yquem appears often enough here to count as a house position rather than a flourish, which tells you what this cellar is quietly for. Around it sit Roulot in Meursault, Arnoux Lachaux in the Côte de Nuits, and Jules Desjourneys making Beaujolais that behaves like Burgundy — with Haut-Brion held back and given age. Bordeaux and Burgundy are the spine; the Jura is the detour worth taking. Treat the sweet wine as a course rather than a coda, and order it before the pudding lands.
